What’s the difference between St. Louis and Baby Back Ribs? St. Louis Ribs are cut from the belly of the pig with the tips removed. They have a large, squared shape with more meat between the bones and marbled fat patterns that make them flavorful and succulent. Cut from the pig’s loin side, tender Baby Backs are smaller and less fatty than St. Louis Ribs, so they cook up quickly and delicious.
