Stubb had hundreds of good, close friends. But most would agree that one of his closest was Texas music icon, Joe Ely. Stubb met Joe sometime during the seventies and Joe was one of the first musicians to play live music at Stubb's restaurant in Lubbock. Through the years, Joe was as responsible as anyone in making the Stubb's name legendary. One Christmas in the late 80's, Stubb, Joe, his wife Sharon, and another Texas music great, Kimmie Rhodes produced the first label bottled batch of Stubb's Legendary Sauce in the kitchen of the Ely household.
Later, when Stubb's relocated his restaurant to Austin and needed a big act to headline the grand opening, Stubb's naturally turned to his best friend Joe. That's right, even though he was an International star touring with the Rolling Stones, The Clash and Bruce Springsteen; it was Joe Ely who took the stage to christen the new establishment. Even to this day, Joe is still working to promote and honor his close friend. He's producing a feature length documentary chronicling Stubbs's life to be finished in Spring 2009. In honor of these two great friends, try this combo.
All Stubb's Smoked Meats have been flash-frozen to ensure freshness during shipment and may arrive partially frozen. As long as the meats are cool to the touch upon arrival, you may serve, refrigerate or store them immediately with confidence. Remove the products from cooler and put them in the refrigerator for thawing if you plan to use them within the next 6 days. To store your meats for future use, place them directly in the freezer. Do not remove plastic until you are ready to begin heating.
