Stubb's Heating Instructions
Stubb never did write down his two most important ingredients, but he wasn't shy about telling anyone who asked. "Love and happiness," he would say. A lifetime of tradition goes into every smoked meats order delivered to your front door, and as such, we would prefer it if you enjoyed the authentic flavor as he first intended. These reheating instructions are designed to help you reheat your smoked meats for the best taste possible.
First, open your cooler immediately. Check to make sure your order is correct and that your smoked meats are frozen or cool to the touch. If there are any problems, please contact customer support right away at 1-877-788-2271 (ext. 13).
Next, remove the dry ice packaging with a pair of oven mitts, tongs, cloth gloves or cloth napkins. DO NOT HANDLE DRY ICE WITH BARE SKIN. DO NOT TASTE OR PUT IN MOUTH. DO NOT INHALE DRY ICE FUMES (provide adequate ventilation as heavy carbon dioxide vapor released can cause suffocation). DO NOT LEAVE DRY ICE ON A TILED COUNTERTOP OR GLASS SHELF. DO NOT PLACE IN TIGHTLY STOPPERED OR SEALED CONTAINER (do not allow solid dry ice down the drain as it can damage plumbing).
Leave cooler in a well-ventilated area to allow dry ice to evaporate. It will sublimate (from solid to gas). Do not leave children unattended near dry ice.
Place your smoked meats in the refrigerator if you plan on using them within the next week. If you do not plan on using your smoked meats within a week, products should be placed in the freezer to ensure maximum freshness.
When you are ready to eat, follow the reheating instructions below. Keep in mind that it can take 24-72 hours or more to thaw certain smoked meat items (thawing times are listed below), so please plan ahead!

Smoked Beef Brisket
Thaw in refrigerator for 12-24 hours before heating
3-5 lbs. Whole Beef Brisket
Conventional Oven:
- Preheat oven to 375°F
- Remove thawed brisket from plastic
- Place a sheet of foil large enough to cover the brisket in a shallow baking pan (two sheets of regular foil or one sheet of heavy duty foil)
- Pour ¼ cup of water over the meat and pinch the foil closed, creating an airtight ''tent'' over the brisket
- Place in preheated oven and heat for 10-12 minutes per pound (approx. 30-60 minutes) or until it has reached an internal temperature of 165°F
2 lbs. Sliced Beef Brisket
Conventional Oven:
- Preheat oven to 375°F
- Remove thawed brisket from plastic
- Place a sheet of foil large enough to cover the brisket in a shallow baking pan (two sheets of regular foil or one sheet of heavy duty foil)
- Add 2 tbsp. of water over the meat and pinch the foil closed, creating an airtight ''tent'' over the brisket
- Place in preheated oven and heat for 10-12 minutes per pound (approx. 20-30 minutes) or until it has reached an internal temperature of 165°F
- Sliced brisket will heat faster if slices are "fanned" out
Use caution when removing the foil as steam may be trapped inside and can cause injuries.

Chopped Beef Brisket
Thaw in refrigerator for 6-8 hours before heating.
2 lbs. Chopped Beef Brisket
Stove top:
- Remove chopped beef from plastic
- Place in a medium size sauce pan
- Add 2 tbsp of water and cover with a lid or foil
- Cook over medium heat for 10-20 minutes or until beef is heated through
5 lbs. Chopped Beef Brisket
Stove top:
- Remove chopped beef from plastic
- Place in a large sauce pan
- Add ¼ cup of water and cover with a lid or foil
- Cook over medium heat for 10-20 minutes or until beef is heated through
Hint: Stirring the chopped beef every 5 to 10 minutes will improve the consistency and help it warm faster.

Beef and Pork Sausage
Thaw in refrigerator for 6-12 hours before heating.
Stove top:
- Remove sausage from plastic
- Place in medium size nonstick pan or skillet
- Add ¼ cup of water
- Cook over medium heat for 5-10 minutes until the water evaporates
- Pan sear for 5 additional minutes to brown the outside
Note: If your sausage is frozen when you start the heating process, you may need to increase cooking time by 50 percent.

Baby Back and St. Louis Ribs
Thaw in refrigerator for 6-12 hours before heating.
Conventional Oven:
- Preheat oven to 350°F
- Remove ribs from plastic
- Wrap each rib slab in two sheets of regular foil (or one sheet of heavy duty foil) meat side up
- Pinch foil tightly closed and place in a shallow baking pan
- Heat for approximately 30-40 minutes or until ribs are heated through
- For dryer ribs, open foil for the last 10 minutes of heating
Note: Remove ribs from oven carefully, they will be hot.
If you have leftovers you can reheat them by simply repeating our reheating instructions. Do not overcook; they tend to become dry. You may add 2-4 tablespoons of water inside the aluminum foil pouch to keep them juicy.

Bone-In Spiral Sliced Ham
Thawing times may vary depending on the size of the ham. We do not recommend refreezing after 8 days of refrigeration.
- Thaw in refrigerator for 12-24 hours.
- Serve Ham at room temperature
If you prefer it warm, gently heat in conventional oven:
- Preheat oven to 275°F
- Remove only a few slices from the bone at a time
- Wrap slices loosely with foil
- Heat ham in the oven for approximately 10 minutes per pound or until desired temperature is reached
Note: Repeated reheating of the ham can dry and alter its flavor.

Peppered Pork Tenderloin
Thaw in refrigerator for 8-12 hours.
Conventional oven:
- Preheat oven to 275°F
- Remove 1.5 lbs. tenderloin from plastic
- Wrap in foil and place in preheated oven
- Warm until it has reached the internal temperature of 140°F (approximately 30 minutes)

Whole Smoked Turkey
To thaw, place turkey (still in sealed plastic) in refrigerator for 24-72 hours before heating.
We recommend thawed products be used promptly. As long as the packaging remains unopened the turkey may be consumed within ten days.
Stubb's Whole Smoked Turkey will have a pink color due to the natural smoking and curing processes and does not indicate a an undercooked product.
Conventional oven:
- Preheat oven to 350°F
- Remove from plastic and place in a large roasting pan
- Add ½ cup of water
- Cover pan with foil, pinching it tightly to the edge
- Place on a baking sheet and put into a preheated oven
- Heat until the internal temperature is 165°F at the thickest part of the breast (approximately 15 minutes per pound)
- Let stand for 15 minutes for easier slicing
Note: If your turkey was frozen in the center when you started the heating process you may need to increase the cooking time by up to 50 percent.
DO NOT STUFF. Since the turkey is fully cooked, desired stuffing should be cooked separately.

Smoked Boneless Turkey Breast
Thaw in refrigerator 12-24 hours before heating.
Conventional oven:
- Preheat oven to 300°F.
- Remove turkey breast from plastic and wrap in foil
- Add ¼ cup of water before pinching foil tightly closed
- Place in shallow baking pan and heat for 40-50 minutes or until internal temperature is 150°F
Note: Stubb's Smoked Turkey Breast will have a pink color due to the natural smoking and curing processes and does not indicate an undercooked product.

Baked Potato Casserole
Thaw in refrigerator for 3-6 hours before heating
Conventional oven (Preferred method):
- Preheat oven to 375°F
- Remove sleeve and lift one corner of the film cover
- Place tray on baking sheet on center rack of oven
- If frozen, heat for 1 hour 15 minutes
- If thawed, heat for 40-45 minutes
- Using pot holders and both hands carefully remove baking sheet containing tray from oven
- Carefully remove film; product will be HOT
Microwave (Quick method):
- Remove sleeve and lift corner of inner film
- Place on microwave safe plate
- Use HIGH power setting
- If frozen, microwave for 17 minutes
- If thawed, microwave for 14 minutes
- After heating, let stand in microwave for 1-2 minutes
- Using pot holders and both hands carefully remove tray
- Carefully remove film; product will be HOT

- If thawed, heat for 30-35 minutes
- Using pot holders and both hands carefully remove baking sheet containing tray from oven
- Carefully remove film; product will be HOT
Microwave (Quick method):
- Remove sleeve and lift corner of inner film
- Place on microwave safe plate
- Use HIGH power setting
- If frozen, microwave for 11-13 minutes
- If thawed, microwave for 8-10 minutes
- After heating, let stand in microwave for 1-2 minutes
- Using pot holders and both hands carefully remove tray from microwave
- Carefully remove film; product will be HOT

Serrano-Pepper Spinach
Thaw in refrigerator for 3-6 hours before heating.
Tray is not suitable for conventional oven heating.
Microwave:
- Penetrate plastic film with a fork
- Place on a microwave safe plate
- Use HIGH power setting
- Microwave for 2½ minutes
- Peel back and remove the plastic film
- Stir the spinach
- Heat for an additional 1½ minutes
- Let stand in microwave for 1-2 minutes
- Remove carefully; product will be HOT

Thaw pie in refrigerator 6-8 hours and eat chilled.
Conventional Oven:
- Preheat oven to 350°F
- Remove plastic from pie and heat for 20-25 minutes
